La sua raccolta avviene al mattino presto, quando il bocciolo non si \u00e8 ancora aperto.<br>La raccolta, che viene effettuata a mano ancora oggi, non \u00e8 per nulla semplice. I raccoglitori devono camminare per molte ore lungo terreni impervi e con temperature estive spesso molto calde. Si pensi che per ottenere circa 1 Kg di capperi piccoli, si deve lavorare per almeno 1 ora di buona lena. Una volta raccolti, i <strong>capperi<\/strong> <strong>di salina<\/strong> vengono stesi al sole ad asciugare. Successivamente, per poter essere consumati e conservati, vengono lavorati con la tecnica della <strong>salatura<\/strong>. Il procedimento prevede che i capperi vengano sistemati in grossi contenitori, alternando uno strato di capperi ad uno di <strong>sale grosso<\/strong>. Restano a riposare cos\u00ec stipati per circa <strong>40\/45 giorni<\/strong>.<\/p>\r\n<h3>Il loro uso in <strong>cucina<\/strong> \u00e8 conosciuto sin dai tempi pi\u00f9 remoti.
